- Dill Pickle slices
- 2 tbsp melted butter
- Oil for frying (recommend avocado oil)
Sauce
- 1/2 cup gochujang
- 6 tbsp ketchup
- 4 tbsp mirin
- 4 tbsp soy sauce
- 4 tbsp honey
- 2 tbsp brown sugar
- 8 cloves garlic, grated
- 3 tbsp rice vinegar
Chicken
- 4-5 boneless, skinless chicken thighs (cut into roll-sized squares)
- Large pinch of salt
- 1 cup buttermilk
- 1 cup all-purpose flour
- 3/4 cup cornstarch
- Salt, pepper, garlic powder, onion powder (for seasoning dredge)
Slaw
- 1 cup thinly sliced cabbage
- 1/4 cup shredded carrots
- 1/4 medium red onion, thinly sliced
- 1/4 cup mayo
- 1 tbsp lemon juice
- Salt and pepper to taste
Method
Step 1: Marinate the Chicken
In a bowl, add chicken, buttermilk, and salt. Cover and marinate for at least 4 hours, ideally overnight for maximum flavor.
Step 2: Prepare the Slaw
In a bowl, combine cabbage, shredded carrots, red onion, mayo, lemon juice, salt, and pepper. Mix until well combined, cover, and refrigerate until ready to use.
