KFC Sliders

These KFC (Korean Fried Chicken) sliders pack a punch with crispy, juicy chicken, a sweet and spicy sauce, and a refreshing slaw—all on fluffy King’s Hawaiian Sweet Rolls. Perfect for parties or a satisfying meal, these sliders bring out the best of Korean flavors in a convenient, handheld form.

Ingredients

Sliders

  • 12-pack King’s Hawaiian Sweet Dinner Rolls
  • Dill Pickle slices
  • 2 tbsp melted butter
  • Oil for frying (recommend avocado oil)

Sauce

  • 1/2 cup gochujang
  • 6 tbsp ketchup
  • 4 tbsp mirin
  • 4 tbsp soy sauce
  • 4 tbsp honey
  • 2 tbsp brown sugar
  • 8 cloves garlic, grated
  • 3 tbsp rice vinegar

Chicken

  • 4-5 boneless, skinless chicken thighs (cut into roll-sized squares)
  • Large pinch of salt
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 3/4 cup cornstarch
  • Salt, pepper, garlic powder, onion powder (for seasoning dredge)

Slaw

  • 1 cup thinly sliced cabbage
  • 1/4 cup shredded carrots
  • 1/4 medium red onion, thinly sliced
  • 1/4 cup mayo
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Method

Step 1: Marinate the Chicken
In a bowl, add chicken, buttermilk, and salt. Cover and marinate for at least 4 hours, ideally overnight for maximum flavor.

Step 2: Prepare the Slaw
In a bowl, combine cabbage, shredded carrots, red onion, mayo, lemon juice, salt, and pepper. Mix until well combined, cover, and refrigerate until ready to use.

Step 3: Make the Sauce
Combine all sauce ingredients except for garlic and rice vinegar in a small sauce pot. Whisk to combine and heat over medium until the sugar melts and the mixture reaches a gentle simmer, about 4-5 minutes. Transfer to a bowl, add grated garlic and rice vinegar, whisk to combine, and set aside.

Step 4: Prepare the Chicken for Frying
Preheat your frying oil to 375°F. In a medium bowl, mix flour, cornstarch, salt, pepper, garlic powder, and onion powder. Remove chicken from marinade, dredge each piece in the flour mixture, pressing to coat evenly.

Step 5: Fry the Chicken
Carefully place chicken in the hot oil, frying at 375°F until golden brown and cooked through (internal temperature should reach 165°F), about 6-8 minutes. Set fried chicken on a cooling rack to drain and then toss in the prepared sauce.

Step 6: Assemble the Sliders
Using a bread knife, separate the bottom half of the rolls from the top. Build your sliders with a layer of Korean fried chicken, sliced pickles, and slaw, topping with the remaining rolls. Brush the top buns with melted butter and broil until golden brown.

Step 7: Serve & Enjoy!
