The best knife I own

I was hesitant at first to buy such an expensive knife, but it had what I wanted - Damascus steel and an indent for my hand. It has been the best knife I've owned and I use it more than other knives I've purchased. Stays sharp, dries quick, and has a lot of uses while cooking. I sort of want to buy an extra just to have.

What’s going on TCG

The onyx series on the whole
Pros: Brilliant Balance, Incredibly Sharp, Easy to Maintain
Cons: First Week I found the handles a bit to chunky

Now for the technical sides of it
The Bunka: Brilliant for work on a shorter workstation in a professional kitchen, super sharp tip for exact surgical work
The Chef: The workhorse of my collection, it serves as an extension of my arm and it is a beautiful thing to have a knife that moves with me , my only gripe if the blade profile were like the pairing knife it would be a perfect blade
The Pairing knife: a much needed utility blade and would love to see the chef knife adopt a similar profile

Overall: I’ve been a chef now for 13 years and I’ve run the gamut on blades some great some aweful, the cooking guild is making blades built to last, they have a truly caring customer service team, and if they chose to expand their catalogue into new series I’d be buying every time. These blades are now in the hands of my sous chef and my line cook and were as of now are a full blown TCG kitchen and we’re not looking back
