7Cr17MoV Steel: Hardness, Edge Retention and Is It Good?

7Cr17MoV is a Chinese high-carbon stainless steel with roughly 0.7% carbon, about 17% chromium and small additions of molybdenum and vanadium. It is usually hardened to around 56–58 HRC. It sharpens easily, resists rust well, and holds an edge adequately rather than exceptionally.

If you have been reading knife listings, you have seen this code. It sits on a lot of mid-range kitchen knives, and the arguments about it online swing between "excellent value" and "cheap steel". Both camps are describing the same thing badly. Here is what the number actually means, what it does on a board, and who should buy it.

What the name means

Chinese steel designations encode the recipe. Read 7Cr17MoV as: roughly 0.7% carbon, about 17% chromium, with molybdenum and vanadium added in small amounts.

  • Carbon is what lets the steel harden and take an edge. At 0.7% it is comfortably in high-carbon territory for a stainless.
  • Chromium at 17% is what makes it stainless. Above about 13% free chromium, steel forms the passive oxide layer that resists rust.
  • Molybdenum improves hardenability and helps the steel keep its strength through heat treatment.
  • Vanadium forms hard carbides that refine the grain, which means a finer, more stable edge.

In composition terms it lands close to the Western 440-series stainless steels. What separates a good 7Cr17MoV blade from a poor one is almost never the recipe — it is the heat treatment and the grind.

Hardness: what to expect

Mass-produced 7Cr17MoV typically runs 56–58 HRC. Some makers push it higher. That band is a deliberate compromise: hard enough to hold a working edge through a week of prep, soft enough that the edge rolls rather than chips when it meets a bone or a ceramic plate, and soft enough to bring back on a stone in a couple of minutes.

For context, a 60 HRC blade will hold its edge noticeably longer and take noticeably more work to resharpen. Neither number is better in the abstract. We go into what the scale actually measures in our Rockwell hardness guide.

Edge retention, toughness and corrosion resistance

Edge retention: adequate, not remarkable

This is the honest weak point and the reason the steel gets dismissed. Against a high-alloy steel like AUS-10 or VG-10 at the same hardness, 7Cr17MoV gives up edge life. In a home kitchen doing normal volumes, that difference is measured in weeks between honings, not days.

Toughness: genuinely good

Run in the mid-50s, it is forgiving. It does not chip the way a very hard, high-carbide steel does when you hit a squash seed or knock the edge on the side of a pan. For a knife that gets used by everyone in the house, that matters more than most spec sheets admit.

Corrosion resistance: strong

Seventeen percent chromium is a lot. You still should not leave it wet in the sink or put it in a dishwasher, but it will forgive a busy evening in a way that a plain carbon steel like 1080 will not.

Sharpening: the real advantage

This is where the steel earns its place. It takes an edge quickly on a basic whetstone and does not demand diamond plates or hours of patience. If you sharpen your own knives — and you should — an easy steel that you actually maintain will outcut a hard steel you leave to go dull.

7Cr17MoV compared with the steels you will see next to it

vs AUS-10. AUS-10 is a Japanese stainless with more carbon and added vanadium, usually hardened higher. Better edge retention, more work to sharpen, more prone to chipping. It is the core steel in our Feather Forge blades, where it sits behind 73 layers of feather Damascus.

vs 10Cr17MoV. Same family, more carbon. Our Bara Forge knives use a 10Cr17MoV core at 60 HRC — harder, longer-lasting on the edge, and correspondingly less forgiving.

vs VG-10. The reference point for mid-to-high-end Japanese kitchen knives. Better edge retention than 7Cr17MoV, typically harder, usually more expensive.

vs 1080 high carbon. Not stainless at all. A 1080 blade like our Snažan Heritage Cleaver takes a keener edge and develops a patina over time, but it will rust if you let it sit wet. Different trade, not a worse one.

Is 7Cr17MoV good for kitchen knives?

Yes, for most people, with one condition: the blade has to be forged and heat-treated properly, and ground thin enough to cut. A thick, badly ground blade in any steel is a bad knife. A well-forged 7Cr17MoV knife with a thin edge will out-perform a thick knife in a more exotic steel every single time.

Buy it if you want a knife that stays sharp through normal use, shrugs off a wet hand, comes back to life on a stone in minutes and does not punish you for the occasional mistake. Look elsewhere if you push high volume every day and want the longest possible interval between sharpenings.

Looking after a 7Cr17MoV knife

Hand wash and dry it immediately — stainless is rust-resistant, not rust-proof. Keep it off glass, stone and ceramic boards; wood or end-grain only. Hone it when it starts dragging instead of biting, and put it on a stone a few times a year. Store it in a block, on a magnetic rail or in a sheath rather than loose in a drawer, where the edge gets knocked against everything else.

Questions people ask

Is 7Cr17MoV stainless steel?

Yes. At around 17% chromium it is comfortably above the ~13% threshold at which steel counts as stainless. It resists rust well but still needs drying after use.

Is 7Cr17MoV the same as 440C?

Not identical, but it sits in the same family. Both are high-chromium stainless steels in a similar carbon range, and in practice they behave alike. Heat treatment separates two blades in these steels far more than the designation does.

Does 7Cr17MoV rust?

It can, if you leave it wet, store it damp or put it through a dishwasher. Normal use with a quick dry afterwards will not mark it. Our knife care guide covers the routine.

What angle should I sharpen it at?
