Paring Knives

A paring knife is what you reach for when the work gets too small for a chef's knife: peeling, hulling, coring, deveining, segmenting citrus, trimming silver skin, and all the cuts you make in your hand rather than on the board. Which paring knife is right for you

The Damascus Dynasty 4" Paring Knife is the full Damascus treatment in miniature: 67 layers wrapped around a cobalt-enriched 10Cr15CoMoV core at 60±2 HRC, a hand-hammered spine running into raw Damascus patterning, and a full tang black walnut handle. Four inches is short enough to peel an apple in the hand and hard enough to hold its edge through a season of fine work.

The Silver Dynasty 4" Paring Knife is the same blade and the same 67-layer, 60±2 HRC core in a mirror-polished finish, set into a full tang olive wood burl handle. Choose between the two on finish and handle feel rather than performance, because they cut alike.

The Bara Forge Paring leans utility. It is hand-forged layered steel over a 10Cr17MoV core, finished with a stabilized burl wood handle and the signature rose mosaic pin, and it carries more blade than the two Dynasty paring knives. Pick it if you want one small knife that covers both detail work and light board prep.

Common questions

What size paring knife should I buy? Four inches covers almost everything a paring knife is for. Go longer only if you want the same knife to handle small board prep, in which case a petty knife is the better answer.

Is a paring knife the same as a petty knife? No. A paring knife is short and made for in-hand precision. A petty knife is longer and bridges paring and chef work, so it stays useful on the board as well as off it.

How do I keep a paring knife sharp? Hand wash and dry it, keep it off other blades in the drawer, and touch the edge up on a fine stone. A short blade takes very few passes.
