How to Sharpen a Serrated Knife: Step by Step
Sharpen a serrated knife one scallop at a time with a tapered diamond or ceramic rod. Match the rod's diameter to each gullet, work only the bevelled side at the factory angle, use a few light strokes per scallop, then strip the burr from the flat side.
Almost everyone is told serrated knives cannot be sharpened and should simply be replaced when they stop cutting. That is a convenient thing to believe if you sell disposable bread knives. A serrated edge is just a row of tiny curved blades, and each one can be brought back — it takes a rod, twenty minutes and some patience, and a good serrated blade will take that treatment for decades.

Can you sharpen a serrated knife?
Yes. You cannot do it the way you sharpen a straight edge, which is where the myth comes from. Dragging a serrated blade across a flat whetstone grinds down the points of the scallops and does nothing to the curved cutting surfaces inside them. You end up with a flatter, blunter knife and the conclusion that it could not be saved.
The edge is built differently, so the tool has to be different. Look closely at the blade and you will see two features: the points, which do the initial piercing through a crust or a tomato skin, and the gullets — the curved scallops between them, which do the actual cutting. Sharpening a serrated knife means restoring the gullets one at a time.
What you need
- A tapered sharpening rod — diamond-coated or ceramic, round or oval, tapering along its length so you can find a diameter that fits each gullet. This is the only tool that genuinely matters.
- A cloth or towel to rest the blade on and keep it from sliding.
- Good light, ideally from the side, so you can see the bevel and the burr.
- A loupe or reading glasses if your eyes are anything less than excellent. You are working at a scale of two or three millimetres.
What you do not need: a pull-through sharpener, an electric sharpener, or a flat whetstone. More on why below.
How to sharpen a serrated knife, step by step
- Find the bevelled side. Nearly every serrated kitchen knife is ground on one side only. Lay the blade flat on the counter and look along the edge: one face is flat, the other carries a visible angled grind at each scallop. That bevelled face is the only one you sharpen.
- Match the rod to the gullet. Slide the tapered rod into the first scallop and move it along until the diameter fills the curve without forcing. If the rod is too thin it will cut a groove in the middle of the gullet; too thick and it will only touch the points.
- Set the angle. Tilt the rod to sit flush against the existing bevel rather than choosing an angle of your own. On most serrated kitchen knives that lands somewhere around 13 to 20 degrees. You are following the factory grind, not creating a new one — let the bevel tell you where to sit.
- Stroke outward, lightly. Push the rod away from you, along the curve, with light pressure. Five to ten strokes per gullet is usually plenty. Keep every stroke in the same direction; sawing back and forth rounds the edge over.
- Check for a burr. Run a fingertip carefully down the flat side, across the edge rather than along it. When you feel a faint wire of metal turned over, that gullet is sharp. Move to the next one.
- Work the full blade. Repeat scallop by scallop from heel to tip. On a 10-inch serrated slicer that is forty-odd gullets, so give yourself the time. A podcast helps.
- Remove the burr. Lay the flat side of the blade against the rod, or against a fine ceramic stone, completely flat — no angle at all — and make two or three very light passes. This strips the turned metal without grinding the flat face.
- Test it. A properly sharpened serrated knife starts a cut on crusty bread or a ripe tomato with the weight of the blade alone, no pressing and no sawing. If it still needs force, go back to the gullets that feel dull rather than reworking the whole edge.
Which side do you sharpen, and why it matters
Only the bevelled one. Working the flat side changes the geometry of the whole edge, and on a single-bevel serration that means the knife will start steering off line as you cut — the blade wanders instead of tracking straight through a loaf. If you cannot tell which side is bevelled, hold the knife edge-on under a lamp and rotate it slowly; the ground face throws a distinct bright line back at you.
Double-bevel serrations do exist, mostly on steak knives and some hybrid slicers. Treat each side identically and alternate, finishing with the lightest possible pass on both.

How often does a serrated knife need sharpening?
Far less often than a chef knife. Because the points sit slightly proud of the gullets, they take the impact against the board and shield the cutting surfaces, which is why a bread knife in a busy kitchen can go a year or more between sharpenings while the chef knife beside it gets honed weekly.
The signs it is due: the blade skids across a tomato skin instead of biting, you find yourself pressing down to start a cut on crusty bread, or slices come out compressed rather than clean. Any of those means the gullets have gone. Cake crumbs and squashed loaves are a sharpening problem, not a technique problem.
Steel matters here too. Harder steel takes a little more work per sharpening and then leaves you alone for a great deal longer.
What not to use
Flat whetstones. They only reach the points. You will flatten the serrations and lose the knife's whole reason for existing. Save the stone for your straight-edged blades.
Pull-through sharpeners. The carbide or ceramic wheels are set for a straight edge and will tear the serrations rather than sharpen them. A few passes can ruin a blade permanently.
Electric sharpeners. Some sell a "serrated" slot; most of them simply grind the points down. Unless the manufacturer is explicit that it handles single-bevel serrations, leave the knife alone.
Honing rods. A standard smooth or ribbed honing steel realigns a straight edge. It does nothing useful inside a gullet. The tool you want is a tapered sharpening rod, which is a different thing despite looking similar.
